What chef's pay good money for is the much rarer marsh samphire. Sadly this is ten-a-penny rock samphire and you won't find it in the shops. It isn't used much in cooking either, the iodine tang is just a bit too much for some taste-buds. In my family my mum and I love it, my brother sister and dad detest it!
