solch scharfe Chilies trockne ich immer, entferne die Samen und mahle sie dann in einer alten elektrischen Kaffeemühle. Das gibt den besten Cayennepfeffer.

Thanks, Diane! So do I:-) I once ate a curry in the canteen where the cook put way too much chili in- we finished it as a dare though you couldn't really taste anything except heat ( they offered another meal free of charge).

That happened to me in a Thai restaurant in Seattle. I was actually in pain by the end of the meal! I suspect the chef made a mistake in that case, too.

Chilies often have very varying hotness- I suppose once they are in the pot it's difficult to tone down the heat... yoghurt helps.-)
