Nice granite steps (into the void...) I didn't know about the culinary uses of rock samphire, I looked it up and now know it's called Meerfenchel (sea fennel) in German.

It has the tang of the sea, slightly but pleasantly iodine-y. I would lightly steam it for about 2 minutes, serve it with a little unsalted butter and with any white fish such as hake, bass, cod, etc.

Good natural steps to the samphire! A popular ingredient these days.

What chef's pay good money for is the much rarer marsh samphire. Sadly this is ten-a-penny rock samphire and you won't find it in the shops. It isn't used much in cooking either, the iodine tang is just a bit too much for some taste-buds. In my family my mum and I love it, my brother sister and dad detest it!
