This "Chambres et table d'hôtes", actually located in Béars (near Vers) and is not easy to find (without GPS), but it is worth any detour. This is a perfect place to explore the region. Evelyne and Phillip are lovely hosts, who share their knowledge (and wisdom!) with their guests. It is great to have dinner in the evening together with the hosts and the other guests. Evelyne is a really great chef, so you are able to taste a cuisine with local flavours. A year ago, we had talked about the different cassolets - and she had offered to prepare one "next time". We spent the evening having dinner (and a bottle of chilled rosé) having dinner in the restaurant "Le Grandgousier". It is very convenient, as they have tables outside - under the parasols. "Le Taboulé Ardéchois" Dried (sweet) chestnuts with a mint-espuma in a sauce vinaigrette.

"Autour du Picodon" Picodon is a local goat-cheese. It was served warm with honey and thyme, breaded ("bonbon") and as espuma.

Villersexel has this nice hotel and restaurant, where we spent a summer evening under the shady trees. Filet de canard aux griottines de Fougerolles avec rattes et légumes I learned that "Griottines de Fougerolles" are cherries macerated in eau de vie, a speciality around Fougerolles in Franche-Comté. "Rattes" are an old variety of potatoes. Small with a nutty flavour.
