A Canadian institution (an Ontario and Quebec one, at least): the chip wagon.

As far as I'm concerned, if they ain't chunky they ain't fries.

I am sure this establishment also offers the convenience of a two-litre spray bottle of malt vinegar.

Poutine was originally a modest dish of chips, brown gravy, and cheese curds, Andy, which shrewd promotion has raised to the status of a national symbol. Quebec's marketing industry should get an award.

Let me put in a vote for thin, crispy fries, salted just enuogh to want more, but not, hopefully, raise one's cholesterol (the bad kind, that is.) If I wants potatoes, I'll order potatoes. Reminds me - I must go scrounge dinner tonight, so I can go to McDonald's and get a quarter pounder with cheese, or Culvers and get a spicy crispy chicken sandwich with bigger, chunkier fries. Since the dog always gets the fries that fall out into the bottom of the takeout sack and get cold and soggy while I eat the others, she doesn't care where I go.

Alas, Esther I am now. Low-sodium diet. I think a small poutine has something like 1500 gm of sodium.

Still a favourite over here -but maybe not so chunky. But salt n vinegar a must! Ketchup has never really caught on in these take-aways except by our under 21's. Never tried Poutine. An interesting candid capture here. Well done John.

Thanks, Herb. I must admit that I spent most of my life in Toronto and have never eaten poutine;. you don't see it outside tourist areas in Toronto. I like all the ingredients, though. Just never got round to the combination. Ketchup is popular here, but chip wagons seem always to have malt vinegar, as do fish restaurants.
