Well that worked
I mentioned in my earlier blog that I was going to make a tomato soup something I just normally buy,the recipe is simple and easy to follow and there are no hidden nasties on the ingredients list so I went ahead. I decided to make it later in the day for supper which I did and had it with a large sausage roll in the bowl,my normal method with tomato soup,I had to cut it in half it to get it all in of course but that means it soaks more flavour up. Now I am as full as a gun and toasty warm.
Ingredients
1 tbsp sunflower oil
1 large onion, roughly chopped
1 garlic clove, chopped
1 x 400g/14oz can chopped tomatoes
½ tsp mixed dried herbs
2–3 tsp caster sugar
salt and freshly ground black pepper
4 tbsp double cream
Heat the oil in a large saucepan and gently fry the onion and garlic for 5 minutes until they begin to soften. Stir in the tomatoes, then refill the can with water and pour it into the pan. Add the herbs and two teaspoons of the sugar. Bring to a gentle simmer and cook for 15 minutes, stirring occasionally.
After 15 minutes of cooking, remove from the heat and blend with a hand blender until smooth.
Stir the cream into the soup and season to taste with salt, freshly ground black pepper and sugar.
On tasting I found it a little sharp which I like but you could add another tsp sugar to take the edge off if you like it sweet. I thought the large onion would be overpowering but it worked out just fine. I should never have doubted the bearded ones they have given me some good recipes for proper food not the poncy cheffy stuff.
Is cheffy a word? well you know what I mean.
I used cheap tinned tomatoes as suggested at the cost of 18p so a very economical supper,I will be making this again.

As you know I have a few recipes on my page here, most were on MP before.
Appart from 1 Turkish and a highly modified English one all others are Oriental based or true oriental like the Miso soup which is entirely Japanese.
