Slice a courgette on the diagonal (long strips) and fry in good olive oilve and garlic (not too thinly sliced). You want a contrast between crispy and soft so medium to high heat for a few minutes only is best. You might also need two frying pans on the go if cooking for more than one!!
It goes well with lamb chops (chuletas) and / or rice, but also good as a meal on its own. For further recipes, visit @andyrodkerrecipes ... ;o))))
