This is what I made for dinner tonight - Potticotti. It may sound slightly familar because it's just a variation of manicotti. Instead of the usual filling inside the manicotti noodles, I make a filling out of potted meat, spices, grated parmesan cheese and an egg. Then I make your typical pasta sauce, pour over it and bake it until the shredded mozzarella cheese on top comes out golden brown. I invented this recipe because I alway thought potted meat got a bad rep a long time ago, while it could be jazzed up and become something for more "upscale" palates.
Although it's only one noodle, this is actually bigger than it looks. The plate is larger than normal size and the manicotti noodle really expanded after I had prepared it.

1969 Oldsmobile Cutlass Station Wagon

I saw this cherry looking 1969 Oldsmobile Cutlass station wagon sitting at an automotive repair shop. I guess it's owner had sent it in for some minor repairs. I think it's the same color as the 1969 Oldsmobile 98 LS I used to have.

These are the homemade rolls I made for Thanksgiving. They're actually the kind of rolls you would get in a steak house, but I really like them at home for just about any occasion, so that's what I go with. They're called Texas Roadhouse Rolls.
Thanksgiving Dinner 2024

This is what I fixed for Thanksgiving dinner this year. Turkey, mashed potatoes, homemade gravy, green beans, stuffing, homemade rolls, cranberry sauce and pumpkin pie. I made everything on Thanksgiving Day except for the pumpkin pies, which I always make the night before Thanksgiving.

My turkey this Thanksgiving didn't have any legs or wings on it when I unwrapped it, so I got out a freezer bag of turkey meat, which had two legs and two wings in it, thawed them, and attached them to the body of the bird with corn dog sticks. That's why I called it "Frankenturkey."

Some members of my church and I travelled over to nearby Evansville, Indiana yesterday so that we could make up boxes of food to give away. The place had two big, long assembly lines and as the boxes moved along it, each person would put their item into the box. Each family got things like green beans, corn, yams, stuffing mix, potatoes, celery and a whole turkey. The event, which was called "Gobbler Gathering," gave out 140,000 pounds of food for the less fortunate so that they could have a good Thanksgiving dinner.

I made these Irish Mist Brownies for a funeral dinner held at my church yesterday. A member had died and their family requested the dinner for after the funeral, which my church does all the time.
