1876 erwarb der Gastronom und Hotelier Eduard Sacher den Gebäudekomplex hinter der damaligen k.k.Hofoper, der heutigen Staatsoper. und eröffnete das Hôtel de l'Opéra mit Restaurant, Bar und Café. Sein Sohn Franz Sacher benannte des Hotel und die Gastronomiebetriebe in Sacher um. Von Anfang an zählte das Sacher zu den besten Adressen in der Stadt Wien.
