We have the same usage, "workshop" and "repair shop" are sometimes seen shortened to just "shop". Does the shop name mean they only repair rudders? :))

Somewhere I'd seen that expressions like "the car is in the shop" (meaning it's being repaired) puzzled Britons. Is that not the case, then?

I'd also read somewhere that "shop" came from the same root as "shape," meaning it was a place where things were "shaped." However, the Online Etymology Dictionary doesn't agree--

I go with the Online Etymology Dictionary. Interestingly, the Polish for shop is "skljep", not too far from ""scoppa".
