then you have to flip it off the big round thingy onto the oven surface. Apparently this is a skill not everyone has, but I has it!! Mona was impressed - she has been making this bread with her mother for years and still cannot do this bit

you lift the thin dough with a flat stick and get it onto the big round thingy to put in the oven
