Speaks to a different era and place though. I wouldn't have known it was a quail without research as they are not native to this area. I guess the reference is to speed as they require considerable skill to hunt.

I use to hunt them when I was growing up. It's quite the explosion of feathers when the covey flies up out of the grass! It's about like shooting skeet except that you're never sure about the flight path. :-)
