Coconut Milk Pie

And to top off my dinner, for dessert I had coconut milk pie. I made my pie dough recipe, (which made two crusts, so I'll have to come up with another pie soon), melted chocolate chips and coated the bottom of the crust with them. Before the chocolate had set back up, I gave it a generous sprinkling of flaked coconut. The pie itself called for coconut milk, and then I topped it off with fresh meringue. After baking it for 25 minutes to brown the meringue, it came out looking like this. It had a great coconut taste and when I had a piece after the dinner I made, I sprinkled toasted coconut over the top of it. A meal fit for a king, if I do say so myself.
