Steam until the bottom leaves pull off easily. It will take longer than you think. My dipping sauce recipe : Mayonnaise, yellow mustard powder, lemon juice. You want it thick enough to stick to the bottom of the leaves. That's it!

You can find many other recipes for both artichokes and dips. One of the best I ever had was made by my ex-husband's Italian Nonna. Olive oil and crushed garlic dropped between leaves that have been loosened from the head. Steam as usual.

You just need to steam it until the lower leaves pull off easily! This one was huge, so it had to be steamed sideways because the steamer has a handle-thing in the middle. Make a dip for the leaves, I mix mayonnaise, mustard powder and lemon juice. Don't forget to eat the heart! Thank you, Gudrun!

Well, Keith, it looks exactly like an artichoke.,..because that's what it is! It's a California thing by way of Mediterranean immigrants. Specifically, Italians. This was the first really good one I've bought since coming to Oregon. They're usually dry and kind of old, because they seem to come north by wagon train. Thanks, Keith!
