Topinambur bordo strada
Il topinambur, detto anche rapa tedesca o carciofo di Gerusalemme (nome scientifico Helianthus tuberosus) è una pianta appartenente alla grande famiglia delle Asteraceae, è una pianta molto vitale, quasi infestante.
I tuberi di Topinambur sono commestibili; si raccolgono in inverno, sono molto nutrienti e la cottura è simile alle patate. Nella cucina piemontese sono tipici con la bagna càuda e la fonduta. Il tubero può essere consumato anche crudo con sale e pepe. Ottime proprietà, adatto anche ai diabetici.
