Hot weather - Cold supper ..
Meat is BBQ Tenderloin with Cackalacky Sauce -
Pieces of Asiago Cheese -
Wedges of a tomato (grown in NC) -
Red Skin potato salad (made by our local grocer (Deli Dept.) -
BBQ Siler City, NC
Asiago Wisconsiin

Now what ....
A neighbor from across the street came over while I was butterfly searching -
He asked "do you like zucchini?"
Of course , said I ..
And he asked, "would you like a Vietnamese zucchini from the garden?"
Yes .. would love it.. a small one, please ..
This is what he carried over ..
It is heavy ..
Only direction .. wash and peel ..
Have checked You Tube and Food Sites ..
More confused now than when I started ..
Help !

Breafast roll-up
Gluten free flour tortilla -
Inside is an egg and a couple strips of bacon -
Really enjoyed it -
Do NOT like the high prices of Gluten Free items -
To some Companies, Gluten Free seems to be a 'fad' -
But, if one has problems with wheat/gluten -
You make everything from scratch -
Or do without -
When I saw these GF flour tortillas -
I went by -
The next week, figured I'd only have one at a time to make them last -
They are as good as the regular flour tortillas -

gluten free baking mix [ Bisquick or Glutino - whatever you have ]
7 Up
sour cream
butter
[ maybe add a pinch of salt next time]

but y'all know me -
a recipe is like a map -
you can change course if you want -
I put the baking mix in a large bowl -
added the sour cream and 7-Up -
mixed by hand -
butter was melting is the oven -
using the dish the biscuits would go into -
So far, these are the closest to what I call 'real' biscuits -
but Gluten Free -

Pizza night ..
only problem with being Gluten Free -
one needs to make much of what you consume -
yes, there are ready-made pizzas [ gluten free ] -
but, I refuse to pay outlandish prices -
can add whatever I wish -
this is a cheese .. pepperoni pizza -
the pizza mix makes 2 pizzas -
one crust is in the freezer for later -
just follow the directions of the package -
that's it -
not rocket science -
and, oh how nice the house smells !

Brownies anyone ?
Fudge Brownies - GF = Gluten Free - - Awesome - - 350 deg
(13 x 9 pan)
Ingredients :
2/3 cup cocoa
2 cups sugar
2 cups gluten-free flour blend* - used combination of Gluten Free flours on hand -
2 tsp xanthan gum
2 tsp baking powder
1/2 tsp salt
4 eggs
2/3 cup oil
1 tsp vanilla
1 cup chopped walnuts (optional)
Instructions :
1. In a large bowl, mix cocoa and sugar with a wire whip until thoroughly mixed. Stir in g.f. flour, xanthan, baking powder and salt.
2. In a large bowl beat eggs lightly. Add oil and vanilla.
3. Combine all ingredients. Stir with a large spoon until well combined. Spread into a greased 13x9x2-inch baking pan.
4. Sprinkle 1 cup nuts over batter (or 1/2 cup nuts over half the pan and leave the other half without for those who don't want nuts).
5. Bake at 350 for 25-30 minutes. When cool cut into squares.

** To make a Choc. Frosting - use choc. chips sprinkled on top after removing from oven; spread with a spoon to cover the brownies.**
No idea where I found this, but have tested it and it certainly doesn't last long !

Spice cake and ..
recipe of few ingredients ..
pecans/walnuts - whatever kind you like ..
brown sugar ..
vanilla cake mix - used a yellow cake mix ..
3 large eggs beaten ..
1 - 29 oz can sweet potato pie filling - Bruce's has all the spices in it ..
grease a 13x9 pan with butter ..
sprinkle nuts over that, then top with brown sugar ..
really think the amount stated to use would be too sweet ..
just put what you think is okay for you ..
in a large mixing bowl, blend cake mix - eggs - sweet potato pie filling ..
spoon over nuts and brown sugar ..
bake for 65 min @ 350 deg F ..
( mine was done in 60 min )

crunch ..
baked tortilla chips -
some are plain -
others are spinach based -
spray with Olive Oil on both sides -
place on cookie sheet -
lined with foil -
sprinkle with salt or other spices -
bake @ 350 degrees for 8 minutes -
remove and cool on a rack -
these are gluten free -
