Amelia falafels

Our last WWOOFer, Amelia, is vegetarian, and she showed me how to make falafels. I've tried to before, but unless they were a packet mix, they always fell apart during frying. We tried making them again today (ie after Amelia and her falafel-superpowers had left) and they were still fabulous! Even Ad - the hardened carnivore - loves them.
