The commercial revolution created a great deal of new wealth. Wealth meant a higher standard of living. The new availability of something as simple as spices, for example, allowed for variety in food. Dietary habits gradually changed. Tastes became more sophisticated. Contact with Eastern civilizations introduced Europeans to eating utensils such as forks. Table manners improved. Nobles learned to eat with forks and knives, instead of tearing the meat from a toast with their hands. They began to use napkins, instead of wiping their greasy fingers on the dogs lying under the table. ~ Page 335
