Erasmus was the name of the Dutch humanist who lived from 1466 to 1536. He is commonly known as Erasmus of Rotterdam, as he is said to be born there. So when the university was established in Rotterdam, they named themselves after Erasmus (hoping that the fame of Erasmus would rub off).
EC stands for EuroCity, a network of international fast trains. All the EC lines had names, and this service from Amsterdam to Munich was named Erasmus. According to Wikipedia the Erasmus ran between Amsterdam and Innsbruck (Austria), so Munich wasn't the final destination.
