I made more progress in my recovery today. For the first time since my accident I can walk down stairs normally instead of in the sideways crab like style I had to use to stop putting too much weight on my foot.
Today we have had heavy and relentless rain all day so no walks even if I felt like it. As Bernard rightly said recovering from a foot injury is a slow process but today marks a big turning point and that makes me feel good.
It has been a cold day as well as a wet one so I made a fridge soup to give us both a nice warm feeling inside. I had some odd carrots and green beans in the fridge so I added garden peas,onion,garlic and a few herbs. After an hour simmering I blitzed it and it really hit the spot.
For dinner I made stuffed jacket potatoes,the filling was simple just cheese and onion. The potatoes I roasted in their skins then scooped the potato out and mixed with the cheese filling and a little butter and filled the skins with it,sprinkled more cheese on top and grilled them until golden brown on top. Served with honeyed ham a lovely simple dinner.

When you don't really feel like walking the rain is no problem.
Kitchen work sounds fine for both meals.
I was lucky, no rain so I was able to have coffee and a chat with our lost Lady friend
down in the Harbour, captured a couple of Gulls and Jackdaws while there.

Never heard it called 'fridge soup' but I love it. Sometimes mine is freezer soup lol. Your dinner sounds lovely.
