CARAMELISED CRAB APPLES (by Emma Gunn)

This is gorgeous as a snack or a dessert accompaniment (goes well with ice cream too!).
50g butter
500g crab apples
75g sugar
Ground cinnamon and cinnamon sticks

Melt the butter in a frying pan and when starting to froth, add the sugar and the crab apples. Move them around the pan as the sugar starts to caramelise so they roll about in it and the skin starts to soften and split. Add about a teaspoon of Cinnamon powder and some broken cinnamon sticks. If the crab apples are bigger than cherry size, you can pop them in the oven for about 5 mins (200 C 400 F gas mark 6). If they are cherry size or smaller, don't bother putting them in the oven. Serve with the cinnamon sticks and icing sugar if you wish. Enjoy the crab apples and the caramelised cinnamon sticks!
