BLACKBERRY VODKA (via Alison Vaughan)

450g blackberries (1 lb)
c. 425g – 450g (15 oz – 1 lb) caster sugar
75cl (1 ¼ pt) vodka

Put 450g blackberries into a large, sealable container (glass or plastic) and add the caster sugar. I put in slightly less than the weight of blackberries, but you can adjust it according to how sweet you want the final result and how tart the blackberries are. Pour the 75 cl of vodka over, stir with a clean spoon and seal the container. Store in a cool, dark place, preferably for at least 3 months, shaking the container at intervals (keeping sure the sugar is being dissolved). Strain through a clean sieve and decant into sterilized bottles. You can use the strained fruit as a sauce for ice-cream or Greek yogurt.
