BEECH LEAF NOYAU (by Emma Gunn)

1 bottle of gin (750 cl)
Half a plastic bag of beech leaves
1 glass of brandy
8 oz sugar

Find a large jar like an old fashioned sweet jar. Fill it half way with beech leaves - remove any old, brown leaves and any stalks. Pour a bottle of gin over the leaves, cover and leave for 3 weeks. After this time, boil half a pint of water with the sugar. Sieve the gin mixture and add the syrup and a good glass of brandy. Enjoy!
