Elderflower Recipes
ELDERFLOWER CORDIAL (by Emma Gunn)

20 elderflower heads
450g sugar
400-600ml water
2 lemons
2 tsp citric acid

Shake the flower heads to remove any bugs and place them in a large bowl. Put the sugar and water in a saucepan and bring to the boil until the sugar has dissolved. Meanwhile, cut the zest off the lemons, cut the pithy ends off the lemon and slice up the rest, adding it all to the bowl of elderflower. Pour the boiling syrup into the bowl and add the citric acid. Cover with cling film or a tea towel for about 24 hours. Sieve, bottle and freeze any spare.
