Is graham flour something graham cookies are made of? Then this bread is a bit sweet, I assume?

Ja dat klopt. Graham Flour is a type of whole-wheat. It's not available in Holland. I used (spelt) whole-wheat.

Ja ik was ook verbaasd over de hoeveelheid suiker en honing. Ik dacht dat alleen de Amerikanen het brood zo zoet maakten, maar ook meerdere recepten in dit boek zijn zo zoet. Zoals gewoonlijk heb ik maar een fractie van al die zoetigheid gebruikt.
