Curried Quinoa and Apple Salad with a Lemon, Honey and Mint Dressing
One of our favourite salads made with Quinoa. Cook a cup of quinoa. Allow to cool and add 1/4 cup of raisins, a thinly sliced small apple, 1/4 cup chopped green onion, 1/2 cup of toasted nuts (I used cashews here), 1/2 cup of fresh mint, chopped. To make the dressing, simply shake together 2 tsps of good curry powder, 1 tsp of honey, the juice of 1 lemon, and 3 tbsp of olive oil. Salt and pepper to taste. Allow the flavours to mingle before serving. Nutritious and delicious ... adapted from a Martha Stewart recipe.
