Vietnamese Hot and Sour Soup
Vietnamese hot and sour soup with cucumber, lime, cilantro and snap peas with a side of crispy tofu. Very delicious. The soup is made with ginger infused vegetable and chili pepper broth and has additions of pineapple, mushrooms, tomatoes, onions, basil, fish or soy sauce, and lime juice. Recipe adapted from the Moosewood Restaurant Low-Fat Favourites Cookbook by the Moosewood Collective.
