Ropa Vieja

Ropa Vieja
Ropa vieja is a Cuban dish. Ropa vieja means, old clothes. The vegetables are cut into long strips. We have ropa vieja with rice and guacamole.

1 cup of thinly sliced onion
3 garlic cloves, minced
1 green pepper, thinly sliced
1 tbsp of tomato paste
1 small can of crushed tomatoes
1 tsp of oregano
2 portobello mushroom caps, gills scraped and thinly sliced
1 can of black beans, drained and rinsed
1 cup of vegetable broth
1 tbsp of lime juice
salt and pepper to taste

Saute the vegetables. Add the herbs and spices, crushed tomatoes/paste as well as the black beans and vegetable broth. Simmer until thick. Add the lime juice at the end when you are ready to serve the ropa vieja. Nice as a rice bowl with a side of guacamole.
