Tuscan White Beans with Garlic and Fresh Sage
Saute 4 cloves of minced garlic in some olive oil. Add six chopped leaves of sage. Don't even consider using dried sage. It has to be fresh. Add 1 1/2 cups of canned tomatoes and one large can of rinsed, drained white cannellini beans or white kidney beans. Simmer until the flavours have melded. Add 1 1/2 tsp of lemon juice before serving. Serve with a really good bread and the warm baby kale salad.
