Southern Style Black-Eyed Peas with Gingered Apple and Parsnip Mash
Black-eyed peas with greens (my greens are missing) served with mashed potatoes and a gingered apple and parsnip mash. The gingered mash recipe calls for sweet potato but I didn't have any sweet potato. I used parsnips and it worked beautifully. Wonderful meal. I just love cooking. Here is the recipe for the gingered mash, use either sweet potato or parsnips. You will be made very happy.

Gingered Apple and Parsnip Mash

This recipe usually calls for sweet potatoes (2 of them should do it). I was out. So, I substituted parsnips.

5 large parsnips peeled and cut into chunks
2 apples, peeled and cut into 1/2 inch chunks
1/2 cup of water
1/4 tsp of cinnamon
1 tbsp of brown sugar (you might not need this at all if your apples and parsnips are sweet, taste and decide).
1/2 tsp of grated fresh ginger

Place the apples, parsnips (or sweet potato) chunks into a sauce pan. Add the water and heat until boil. Turn down the heat, put on the lid and let the apples and parsnips (or sweet potatoes) sweat until tender. Stir often. Let the steam do the cooking. Add more water if needed. Mash when tender and add the brown sugar, if required, and the ginger. Salt and pepper to taste. Serve with the black-eyed pea stew.
