Caribbean Sweet Potato Casserole
Beneath the corn meal topping and spinach are layers of coconut infused rice, black beans, sweet potato and more spinach. The whole concoction is baked in a coconut milk with thyme and cumin. Sounds complicated but really, it is just your basic gussied up rice and beans. Recipe from The Moosewood Cookbook by the Moosewood Collective.
