Roasted Red Pepper Soup with Artichokes and Gougeres
A vegetable soup made with chopped carrots, onion, garlic, celery, vegetable broth, four roasted red peppers (skinned, seeded and blended after roasting), one can of tomatoes, basil and thyme. Add a small jar of artichokes after simmering the soup for an hour or so.

Serve with savoury gougeres.
