Chilean Empanadas with Lime Corn
In the summer we have corn on the cob that is slathered in a little butter, a little mayonnaise, drizzled with lime and then sprinkled with cayenne pepper - a la Chihuahua, Mexico. In the winter, we just use frozen corn and add a little of those ingredients. The corn accompanies the empanadas perfectly.
