Winebar Kensington's Spanish Cheese Biscuits

Winebar Kensington's Spanish Cheese Biscuits
Savoury Spanish biscuits. Perfect with black olives and a glass of wine. Recipe by Cam Dobranksi.

1 cup of flour
1 cup of grated sharp cheese
1/2 cup of butter
1 tsp of chopped, fresh rosemary (or thyme)
1/2 tsp of paprika
dash of cayenne
3 chopped sun-dried tomatoes (chopped olives would also work)

Combine all ingredients and form into a supple dough. Shape into a 1 inch diameter log. Wrap tightly in plastic wap and chill for at 60 minutes. When ready to bake, slice the dough into 1/4 inch rounds. Place on a parchment-lined cookie sheet and bake in a 350 degree oven for about 12-15 minutes or until golden. Allow to cool on a rack before storing.
