Three Sisters With Egg
Roasted squash with corn and beans. Moosewood Restaurant Celebrates Cookbook by the Moosewood Collective. The recipe consists of roasted squash, coarsely chopped red onion, lots of garlic, sage, thyme, lima beans, and corn. Saute the onion, garlic, corn, and lima beans. Add the sage, thyme and squash. Let the flavours mingle on low heat. Moosewood roasts it all in the oven. I prepared it all, except for the squash, on the stove top.

We like this with a fresh egg on top. Very, very delicious.

The introduction to this recipe says that the Iroquois called squash, corn, and beans the three sisters. They were grown together. The beans wound their vines around the corn stalks while the squash leaves shaded the ground from the hot sun.
