Handmade Chocolates
For several years I made hand-dipped, artisanal chocolates with organic, fair-trade couverture chocolate. Ginger and cayenne, raspberry, Grand Marnier, amaretto, whiskey, hazelnut, mocha, lime and coconut, sel de mer caramel and several other flavours. The ginger and cayenne in white chocolate ganache dipped in dark Cuban chocolate were the all time best sellers. I made a ton of truffles too.

Chocolate making is labour intensive. The ingredients are expensive, especially if one uses fair-trade and organic products. Chocolate that is not organic and fair-trade is produced by child labour.

My business made zero money. It would be safe to say I worked for pennies. From a business point of view, it was a disaster. But, the chocolates were beautiful, they tasted divine, and I made them with the fullness of my heart. I had a whole cadre of faithful customers.

If it were not for my partner, I would have to live in a dumpster.
