Extracting the juice 


After the leaves and the top have been taken off the stalks, the sugarcane is pushed into the turning sqeezer, and the juice is extracted to make molasses. Those guys bumped their heads every once in a while, when the wooden bar came around, and they didn't duck fast enough ;-)

They had several horses which took turns walking the trail.
