Canned Potatoes
A storm took out my internet last Thursday night, so I haven't been able to post anything until today when they came and fixed it. But, these are the last 4 quarts of potatoes I canned last Thursday night and Friday afternoon, out of a total of 18 I did altogether. I was able to do three whole quarts of the tiny whole potatoes, while the rest were a little too big and I had to cut them up like this.

I left the skins on all of them because they're good that way cooked with a roast and green beans.

Great.. but why ?

Potatoes can be got anytime... less you are moving to Siberia ?

Yes, potatoes can be got anytime, but how long will they last after you buy them? I'm still using canned potatoes from 2009. They can be used just like a fresh potato, so why not can them and have them last a lot longer? This way, I don't have to eat 20 lbs. before they go bad, I can just get out a quart at a time.

I canned 18 quarts the other day and today I canned 7 more quarts of potatoes. I also made 7 quarts of vegetable beef soup to use up the last of the potatoes I bought and had some others quartered, buttered and baked tonight. They were good, too! I put some garlic and fresh-picked parsley on them and they came out great.

I understand the point of the problem of large quantites.

Its the reason I dont buy large amounts.

You'd be surprised at how quick it can be done, Norm. Do a few quarts at a time, the pressure cooker holds 7 quarts at a time, so a batch here and a batch there and before you know it, you've got a nice little bit of potatoes put back. You simply peel the potatoes, boil the cut up pieces for two minutes, place them in a quart jar with 1 teaspoon of salt and hot water, then can them at 10 lbs. of pressure for 80 minutes.

I limit the bread and potatoes I eat these days. We use to do a lot of canning when I still lived on the farm, but I don't have the garden to support it now. I suppose if I had a longer commute to the store it would be worth while, but I'm within walking distance here! :-)
