When it comes to the freshness of food, Chinese have higher standards than Germans. For example: you buy the fish alive and it has to stay alive until it finally sees your frying pan. And Chinese don't kill the fish before the organs are taken out. If you're lucky, you see the fish jumping when it has been fried already for one or two minutes. Fish is really persevering!
