over the weekend I saw a beautiful film made in a beijing restaurant, how noodles are made by hand - very fascinating to see an artisan at work

yes, that is quite intriguing to look at. they basically take the dough in their hands, stretch the arms and swing it until the structure dissolves into fine threads of noodles.
