Yotsuba and I had fun experimenting with making our own candy. This is one of our Coconut Sunbutter Cups. We used coconut oil, sunbutter, 80% dark chocolate, shredded coconut, pure maple syrup, vanilla and a dash of salt. It's acutally healthy and really delicious! We also made Coconut/Cherry Nut/Chocolate Bark.

Not only is it healthy, but the coconut oil makes it filling, too. I ate 2 of these right after lunch and wasn't hungry again until supper; I usually eat an orange or an apple in the afternoon. Yes, Yotsuba becomes excited easily, and her expression shows it.

It is high in fat but not necessarily fattening. They are unprocessed, good fats that are converted to energy rather than stored as fat. Over the past 3 years, I have ingested 4-5 tbs. of coconut oil, at least 1 tbs. of nut or seed butter and 4 or 5 square of dark chocolate on a daily basis. My weight has gone down 30 lbs., my cholesterol and blood pressure have improved, and my energy level is much higher. So, for me, it is truly guilt-free candy.
