There's an enormous gap between the "image quality" of 3 versus 2 (1) element lens systems , not ? ..

There's an enormous gap in the quality of my photos too! But yes, all else being equal, the lens quality versus number of elements can produce quite a gap. A problem is in the quality of any particular lens which is some 60-80 years of age. Some good as new, some deteriorated naturally and some poorly cared for during their lives. All of which is hard to detect when buying online or at a fleamarket stall. I have been disappointed in 'quality' cameras and surprised at how good some cheap basics prove to be. All part of the fun, I guess!
