Gluten Free Cheez-It Crackers

8 oz sharp cheddar cheese, grated
4 Tb. cold, cubed butter
½ tsp salt, plus more to sprinkle over the tops
2 Tbs. cold water
¾ cup sweet rice flour
¼ cup cornstarch
½ tsp xantham gum

Pulse all of the dry ingredients together in a food processor until well combined and then add the water and cheese and pulse until the dough comes together.

Chill the dough at least 30 minutes in the refrigerator or 10 minutes in the freezer.

Roll the dough out as thin as possible as this is important for a crisp, crunchy cracker. Use a pizza cutter to make little squares. Lay the crackers on a non stick baking sheet and use a fork to poke the tops of each cracker. (This will help them stay flat)

Sprinkle with a bit more salt. Bake at 350°F for 7 minutes and then rotate the pan and bake another 7 minutes or until just golden at the edges.

Thanks, John! I used the 18-55 lens on this shot and can't wait to get a macro lens so I can get even closer! That means I'll have to make them again, doesn't it? lol

oh yummm, I will try these, do you need the xantham gum, I have seen it called for in many recipes and never used it.

Yes, the xatham gum is necessary. Some grocery stores sell it in individual packages, so you shouldn't have to buy too much. If you were closer, I'd just send you a package.
