Old Dutch cheese
When Dutch cheese has ripened for a couple of years, the flavour increases. The cheese becomes harder and brittle, so it is also known as "brokkelkaas" (brittle cheese).

There is old Dutch cheese (snijbaar = sliceable) and very old (niet snijbaar = not sliceable = brittle cheese). (The last is superb with Niepoort very very very old white port.)
