Durch das frühe Erscheinen seiner Blüten ist der Löwenzahn eine wichtige Bienenweide, die der Entwicklung der Bienenvölker im Frühjahr dient, bei größeren Vorkommen aber auch eine Frühtracht-Honigernte ermöglichen kann. Löwenzahnhonig hat ein kräftiges Aroma, ist im frischen Zustand goldgelb und dickflüssig und kristallisiert feinkörnig zu einem dann gelblichen Honig aus.
