Gracies asked how I make potato cakes 'cos we had them with fish for supper last night.

Cold mashed potato
One tablespoonful of plain flour
One egg yolk
Good handful chopped parsley
Salt and black pepper.

Mix all the above together well and shape into thickish round 'cakes'...sift a very thin layer of plain flour over both sides.
Dip into beaten egg and then into fresh breadcrumbs.
Pat carefully so as not to lose the shape but make sure well covered with crumbs.

Heat a tablespoon of oil of your choice in a frying pan until really hot...add potato cakes...turn heat down a bit. Leave until well browned and crispy then turn over and do the other side.
Best served piping hot.
