International Cooking

I really love cooking (especially for 2 or more). Normally I am a freestyle-cooker (if I can say this, in German I would say "Frei-nach-Schnauze" )

The last two days I tried to cook again with recipe. Over years I hated this way of cooking. I never wanted to read while cooking and I never wanted to must buy the ingredients of a recipe before. I always cook with the ingredients I have at home (most the time with fresh vegetables).
Cooking with a recipe - now I thing it's a chance for me to learn more how to create extraordinary meals and learning more about how people all over the world are cooking.

So please tell me recipes you really like (ingredients and a short "howtodo")! Maybe we can make a little international collection.

Pasta con i Broccoli (for 4 persons)

You take a mashed/thinly cut clove of garlic and a thinly cut chili and two anchovies in oil. These you put in a pan with olive oil and gently warm it until the anchovies dissolve. Then put it off the stove and leave it to rest.
Now you take one fresh broccoli of a fantastic green. I mean so nice and fresh that it will give you the shivers the moment you look at it... :D
Then you peel the hard skin off the stem and divide to four pieces. You give it into a pot with water and put that on the stove to cook. When the water boils you add the pasta (ca 400g) and salt. The moment the pasta is al dente you decant the water and give the broccoli and the pasta in the pan with the garlic and chili and mix it.

Best served with red italian wine, parmigiano (to your liking) and Paolo Conte.

l never use the recipes..also l never like using "gr,kg..etc" this is an easy recipe for me to make a cake..you can put little slices of apples over this mix and put some sugar and nuts over the apples.. my favourite cake :)..

pasta with salmon : (for 2 persons)

- 2 blocks of salmon
- dill
- spaghetti (180 grams)
- liquid cream (20 cl)
- grated cheese

Cook pasta in salted water... cut the stones into small cubes and cook them slightly, then place them in the bottom of a dish (which is in the oven)... cover the salmon and dill and cream... then put the pasta to recover salmon, cream and dill... and cover the pasta with grated cheese.

put the dish in the oven until cheese is golden brown (thermostat 180 °)

and at the table!

Chicken à la GiNa P. (self created!)
(Sorry for my "creative" English but I hope you know what I mean...)

You need:
- chicken filet
- a clove of garlic
- honey
- pepper
- salt
- some different herbs (not needed if you haven't, I use a mix of )

To do:
Cut the chicken into pieces. It's your choice if small or bigger (like a steak).
Make a marinade with garlic, honey, pepper and herbs and put the chicken into the marinade.
After 15 minutes (or longer if you want) pan-fry till it's good. Use salt and pepper how you need.

You can eat it with noodles or rise.
Most the time I take zucchini but you also can take carrots or some other vegetables you like.
A soft cheese sauce with herbs and white wine fits perfect.

Amounts is for 4 people.

-2 skinless chicken breasts cut into small (a bit bigger than bite size pieces)
-1 medium yellow onion cut in half and sliced.
-About 1 to 1 1/2 tablespoons of sun dried tomatoes cut into thin ribbons or chopped depends on whether you like sun dried tomatoes or not that much. There has to be little.
-About a handful of pine nuts.
-1 1/2 table spoons of pesto.
-olive oil for cooking.

heat the olive oil in a heavy skillet and saute the onions until they are tender. Remove and set aside.
Add a little bit more olive to the skillet and heat. When hot add the chicken and saute until they start to brown. Add the pine nuts and saute stirring once in while until the pine nuts start to brown about a minute or two (you don't want them to turn brown but just a little golden). Add the onions, and sun dried tomatoes and stir cook for a minute or so just to heat the onions and release the flavor of sun dried tomatoes. Turn off the heat mix in the pesto and voila.
I serve this with pasta such as bow-tie, radiatore, penne or similar but not spaghetti. You could do the chicken while the pasta is cooking.
